Kosmos Q Smoked Salisbury Steak

A smoked Salisbury steak recipe that proves that if it can be cooked inside, it can be cooked outside!
INGREDIENTS
STEAK PATTY INGREDIENTS
- 1 lbs ground beef
- 1/2 lbs ground pork
- 3 tsp Dijon mustard
- 1/2 teaspoon Worcestershire
- 1/4 cup Texas Beef rub
- 1/4 cup Sizzlin’ Burger rub
- 1 beef bouillon, crumbled
- 2 Tbsp ketchup
- 1 egg
- 1 garlic clove
- 1/2 cup Pork Panko
- 1 grated onion
GRAVY INGREDIENTS
- 1 Tbsp olive oil
- 3 Tbsp flour
- 2 garlic cloves
- 1/2 grated onion
- 5 oz fresh mushrooms – sliced
- 2 Tbsp butter
- 2 cups beef broth
- 2 tsp Dijon mustard
- 2 tsp Worcestershire
- SPG rub, to taste
- 1 cup water
DIRECTIONS
GRAVY RECIPE
- In a pan slowly heat up the butter over a medium heat.
- Add the flour, and whisk untill smooth.
- Slowly add beef broth, stirring as you go.
- While stirring, one by one add all of the wet ingredients, then dry ingredients.
- Keep stirring untill it reaches your desired consistency – add water if too thick.
SMOKED SALISBURY STEAK
- Add all the ingredients to a bowl. Knead until fully combined.
- Form into 6-8 patties. Score with the back of a knife to make them look more steak-like.
- Place patties on smoker preheated to 350ºF (175ºC).
- Cook halfway, then move to a wide pan and add gravy, ideally until submerged.
- Cook in the gravy to an internal temperature of 160ºF (72ºC).
- Serve with a side of your choice and enjoy!
